Chocolate Eclair

            Heavenly Chocolate Éclair

  • 3 boxes of French Vanilla Pudding
  • Milk (Amount depends on how much pudding calls for plus 1/4 cup)
  • 8 ounces Cool Whip(defrosted)
  • Box of graham crackers
  • 1 stick of butter
  • 1 cup sugar
  • 1 cup semi sweet chocolate chips
  • 1 teaspoon vanilla extractaiken and Pedi 017

(I was out of town when I made this, and I didn’t have any vanilla extract. That is why it isn’t in the picture)


Main part of éclair :

  1. In a bowl mix pudding with milk according to directions
  2. Stir all the cool whip into the pudding mixtureaiken and Pedi 020
  3. In the bottom of a casserole dish add a layer of graham crackersaiken and Pedi 022
  4. On top of the graham cracker layer add HALF of the pudding/cool whip mixtureaiken and Pedi 024
  5. Add another layer of graham crackers on top of that

7. Then add another layer of graham crackers

  1. Turn on your stove top to medium
  2. In a small pot add sugar, butter, and 1/4 cup of milk (stir until it boils)aiken and Pedi 034
  3. Add chocolate chips and vanilla extract
  4. Stir just until it begins to bubble (not boil)

5.    Immediately pour chocolate mixture over the top layer of graham crackers in casserole dish.aiken and Pedi 042

6   Put in the fridge until chocolate icing hardens

At last enjoy your little piece of heaven!
